How would I change all this stuff that is at the top of the shop into something that I would want. Kinda like specific to the forum?

what you are looking for is the themes/default/Shop.english.php

all the text in SMFShop will be in there, the three text arrays for that statement that you have quoted is
$txt['shop_welcome_full'], $txt['shop_currently_have1'] and $txt['shop_currently_have2']
